That quote perhaps aptly sums up the state of mind that both Prathima and Viswanath found themselves in, eighteen months ago. Their elder daughter, Maanya was on the verge of a tennis scholarship in the US and their younger daughter Bhavya, had decided on her career path as well.
Viswanath had returned recently from West Africa after a stint of almost 9 years as the CEO of a major telecom player. Essentially a non-family posting, it did take its toll. So here were two people, who had a lot of time on their hands and were literally itching to do something! It helped that they were both foodies! And over dinner one night, Prathima asked if they could use her mother’s recipes to good use. So what began as a ‘tiffin box’ supply quickly moved to a brand – and that is how ammamas was born. Out of respect, out of love, out of a passion for the home made recipes of Smt. Alivelu Mangatayaru, mother to Prathima Viswanath.
Viswanath, always the process person, quickly got approvals from CFTRI Mysuru, and with a little more experimentation, ammamams took to life.
We now serve over 500 departmental stores in Hyderabad, Karimnagar, Siddipet and Hanamkonda. Small steps, and the promise of a huge future. The rest of India beckons!

Obsessions

Quality in food covers two aspects – taste is one of them. For us at ammamas, quality is a continuous, non-stop process; in fact, we are obsessed with it! We took the base process from CFTRI and added the flavours from Smt. Alivelu Mangatayaru’s own recipes, till we were completely satisfied.

And then there is ingredient quality – a quality product cannot come without ensuring quality in all its ingredients. So, whether it is the Sharbati wheat for our flour, or the methi or salt or any of the other spices and additions we use, quality is at the heart of it.  And we ingrain this aspect into our staff and our partner vendors.  We do not tolerate, even the slightest variation.

We take pride that we surpass the standards set by the FSSAI (Food Safety and Standards Authority of India).

All the ingredients and machinery are stored in 100% aseptic conditions.

The cleaning of the machinery used, is done using best practices, which include:

  1. Removal of loose food particles
  2. Cleaning with hot water (60 °C) and approved detergent
  3. Sanitising and bacteria killing – with very hot, clean, RO processed potable water (75 °C) for at least 2 minutes
  4. Hot air drying

Our staff deploy best practices of sanitising, washing hands regularly, usage of face masks, etc. especially during these times. Prior to entry, their body temperatures are checked and this is done every 3 hours during the shift.

This same practice is followed with our delivery team as well.

Our work ethic is best demonstrated by our staff. We do not refer to them as employees, simply because, we believe that they are part of our own family and will grow with us.

Technology
CFTRI
This is India’s premier laboratory under the aegis of the CSIR for food technology. Based in Mysuru, Karnataka, CFTRI has developed over 300 products and processes including equipment designs. It operates commercially by providing licenses to various establishments.
